Lol mine end up off-center a lot, but that's usually easy to fix after repotting. Sounds like you've got everything under control but just in case:
Make sure the light is close enough and powerful enough, if it isn't then the seedling will try to grow taller than it can support in order to reach the light (i.e. it'll get leggy)
If you need to keep it upright, you can use a toothpick as a stake, tape it to the seedling if you really need to. You don't want the seedling to fall over, this will restrict water and nutrient uptake to the leaves and will usually lead to the seedling dying if it isn't corrected
No need to panic though, sounds like you've got a good handle on things!
Yeah I've had to splint seedlings with toothpicks and tape before, using that method I managed to revive one that had a grasshopper bite halfway through its stem when it only had 2 sets of leaves once. It always amazes me how much physical damage plants can come back from with a little bit of tape lol
i just found out last night that you're supposed to clip the first three waves of fruit on pepper plants, otherwise it spends too much energy on fruiting the first couple waves and gets stunted overall
