It can be daunting, but most of the main timeline series are worth watching if you liked what you saw. OG Gundam and Zeta are old, but so good. Or, for newer animation and a bangin soundtrack check out Thunderbolt.
For a non-Gundam rec I would check out Kaiji of you haven't, there are some good elements of material analysis and really gripping tension
