Looks like a great harvest! I love Anaheim peppers, they've got such incredible flavor and are mild enough to eat like a normal vegetable.
What are you planning to do with them?
enchiladas sometime soon for sure; I typically use them in place of bell for most recipes. The skin on anaheims is really tough, so I've gotta go through roasting and skinning them first. Probably gonna just do a day of processing and freezing them
