So apparently the ability to password-protect/encrypt individual folders in Windows is now a "pro feature" and you cant do it on the Home edition lol. Anyone have any recs on how I can achieve this, is there some good open source software or something which isn't a honeypot I can download?

What's your privacy goal / what thing are you protecting against? The privacy rabbit hole can go all the way to only using airgapped open hardware devices.
