I use sleeves for individual knives and put them in a drawer, you can get them on amazon or ebay, just make you get the right sizes

Magnetic strips are another popular option, but I don't like them because the knives are exposed so you or any pets might accidentally cut yourself on them, also if you aren't using each knife on the strip often, they will collect dust

Well, tbh I kind of cheated on softening, the bag said you can soak them by bringing them to a boil for a few minutes then letting them sit in the hot water for an hour or so. I boiled then let it sit for 2 hours, then simmered for the recipe, and they got slightly softer but not significantly so
