They're intel officers, they'll be debriefed, kept relatively comfortably, and swapped or used for diplomatic leverage. No one throws the spies in a hole anymore, they're just too useful.
If, and it's a big if, there are actually NATO officers there they'll probably either be let out to Ukrainian forces or end up in a Russian barracks very briefly before being shipped back home. There are rules for this sort of thing.
