Ate a lime juice based pickle last night, they've been sitting for 10 days or so. It was okay, but tbh, very sweet, and not quite as good as the spicier tasting regular pickles I've been making. But the good news is the horrifying browning I noticed the night I started them ceased and they basically look and eat like normal pickles. Although I have had a lot of stomach pain today so uhhhh hopefully that was just a coincidence of my normally fucked up bowels attacking me. I guess we'll find out when I eat another one.

I think if I do this again I might try lemon juice or maybe half lime juice, half vinegar, then 1:1 with water for the brine, instead of just lime juice + water, so that it's got some of that lime taste but isn't so sugary sweet.

Edit: update 2: adding a little more salt and pepper is very good
