I had a seitan made with lupine seeds the other day instead of soybeans.
I had never considered that other types of beans could be used.
Maybe they can make tofu out of other beans as well
They do. Chickpea tofu is the most common one, but you can use any bean as long as you have the means to mill them into flour. I used a coffee grinder and made black bean tofu once. I determined I like black beans better than black bean tofu lol
Does it need to be tofu? You could try making seitan. You can even make it in the microwave

Seitan doesn't have to contain soy or nuts. At its base, it's literally just flour, and then you add flavor and spices. Using gluten is a shortcut, but gluten is just the protein in flour. Sometimes soy is added for texture, but you can use beans or potatoes instead.
