    Coconut ice cream also tastes kind of dry. What is it about meat and dairy that make it so moist compared to all the alternatives? I guess just more dense protein, fat?

      Thought about this and I wonder if it's because our entire culinary history (for these sort of things) and food science up until recently has been based on animal products.
