Breath of the wild honestly scratches the "do whatever" itch for me. Like, yeah, the big quest is emblazoned on the screen from the start, but it's super optional.

Go out for a glide, build a town, take a big leaf and go sailing, ride a horse, ride a bear, ride a ghibli-style elk, become a nature photographer, fuck around with balls and get a gimp suit, go snowboarding, go bomb fishing. It's all good
