Mellows slightly, but I didn't have a ton of vinegar. The brine also doesn't have sugar so its very vegetal.
Pickled celery sounds awesome actually. Does it just taste exactly like pickles do, or does the celery flavor significantly impact it?
I used about 1/3-1/4 vinegar. (whatever was left in my bottle) and not a ton of salt, I'd say double the amount I would use if boiling pasta. Sorry for imprecise amounts, I threw it together last minute to make my celery last longer.
