      Neat. I might try that but I think I could use chopped potatoes or something instead of tofu. I'm not really a tofu fan. Cauliflower as a replacement is another popular idea, but I'm not a fan of cauliflower either.

    Looks delish! I'm an omni but I've always said that Indian cuisine is the most delicious way to eat a veggie-based diet. Can't really go wrong with curry! I could eat palak paneer for every meal if I was allowed to.

    This has been one of my staples for a few years now, it's so satisfying. I use an instant pot and dry chickpeas, 25 mins if you soak a pound overnight, 50 if you're using them dry.

      Here I get chickpeas in cans of brine and I open, drain, and rinse them immediately before putting them in the pan.
