i bought purple potatos once but they had white parts inside and when cooked green parts. i didn't eat them just to be safe.
They do leech green pigment when boiled. Not sure what was white but that colored it most likely.
Not sure about your particular green potato bits, but the pigment that makes these sweet potatoes purple actually turns green under certain circumstances - for example, if you make a pie out of the potatoes and the other ingredients happen to have the right chemical properties. It looks funny, but it's 100% safe to eat.
Yeah purple potatoes rock, I really like them with some slow cooked beans with a dollop of cashew cream.
Okinawan sweet potatoes by the look of it. Bit on the thicc side for those 😳
