learning opportunity: if a recipe calls for "1/2 a teaspoon of chipotle peppers in adobo sauce"

throw the whole can in, chopped

Dice them and then freeze them. And then anytime you need some spice in something chip a block off and toss it in. It's good. I do this all the time and it's surprising the amount of shit I have improved because I thought thought "wonder how this would be with some adobo in there" and had some in the freezer on hand.

yeah that's a good call! mince them up and freeze them and then thaw as needed when cooking something.

Yep, I do this with these, tomato paste, and other things in a can all the time.

As far as recipe suggestions, you could do a red chilaquiles with them in it. Makes a nice weekend breakfast or lunch if you top them with something like a tofu scramble or whatever you like to eat with breakfast.

I made a mango-chipotle sorbet with a can of chipotle in adobo, some frozen mango chunks, and a blender. I don’t have proportions because i fucked that up.

Put it in food. Its like a 4/10 spice level and really nice smokey flavor so just put it all sorts of stuff. Making pasta sauce? add a dollop. Making an omelet? add a dollop. Making beans? etc. My lady and I go through a jar of chipotle in adobo in a half dozen meals.

chopping them up fine with the sauce and incorporating it all (carefully) into beef, then shaping into patties makes some delicious burgers.
