I'm making Salmon tonight, I started a significantly lower calorie diet and I just can't waste 100-200 calories on butter to drizzle on the salmon as it cooks. Whats gonna be the best butter substitute for this purpose? Its gonna get mixed with lemon juice, and the salmons gonna be covered with garlic powder, salt and black pepper.

You're going to need to use some sort of fat to replace the butter. If I was working with my kitchen pantry I would use olive oil. I'm sure you could also use canola oil.

Honestly, try using half or a quarter amount of butter. Sounds like a lot of butter for the fish.

This sounds like a good plan. Mix the oil up in the lemon juice to emulsify, then use a brush to evenly spread the mixture. I think the original recipe assumes lots of the butter is just going to drip off the fish into your pan.

I’d reiterate the first paragraph and add coconut oil to the mix of options. I remember looking it up at some point and it had a lower calorie yield and saturated fat proportion to butter and other oils.

Clarified/brown butter is good. Still butter, but it's more flavorful so you don't need to use as much
