if you're par/blind baking and then finishing then it helps on the second bake to cover the edges with foil so that they dont burn, since they're likely already caramelized
You mean for the lattice or the whole pie? lattice it's not a ton of work it just takes awhile
cortland, these ones were kind mealy cause it's late in the season but generally tart crisp ones are better
That is true, I'm fairly partial to a mix of Braeburns and Granny Smith.
Golden delicious works pretty well too
