Like, I do think in an ideal world everyone would be vegan and all animals would be free not to be our food...

...Buuuttt I've been eating their products for my entire life and they constitute the vast majority of my favorite foods/drinks and foods/drinks I just like in general, and am thus unwilling to give them up even if I know it would be the better thing to do.

I mean, I probably could if I really, really wanted to, but I just don't want to.

I've gone through various stages of veganism/vegetarianism in my life. It is really hard to eliminate meat, eggs, and dairy from your diet if you live in the US (I don't know about elsewhere). In most of the country, it is next to impossible to eat out at a restaurant if you are vegetarian, let alone vegan. My mother has been (mostly) vegetarian since the 1970s, but usually made exceptions when going out to a restaurant, simply due to lack of choice. There were also some years where she made exceptions because we couldn't really afford enough groceries to sustain vegetarianism, and my dad hunted, so hunted meat was the exception.

The good news is that it's getting a lot easier, especially in cities. Basically the only things I can't get in vegetarian form are BBQ meats. Everything else has a decent vegetarian alternative. I am hopeful that vegan cheese and eggs make the strides that vegan meats have made, because those are the only things keeping me from going full vegan.

I'd recommend daiya cheese if cheese is holding you back. It's a little more expensive than dairy cheese and obviously doesn't taste the exact same but after trying a few kinds and getting used to non-dairy products I like it. Also Miyoko's mozz is great for pizza

Does it melt well in a bechamel? The main thing I use cheese for now is mac and cheese.

I haven't had much luck getting daiya cheese to melt but I also have only used it like a topping (not in sauces)
