I just made chickpea salad for the first time and it's both delicious and easy. Beans are the ultimate ingredient for vegan meal prep.

Butter Bean Salad recipe:
Chop up onion (I like a mix of shallots and green onions, but any onion will do) as small as you can. Do the same with some parsley. Open a can of Butter Beans, drain the water, and dump them in your mixing bowl. Add the vegetables. Drizzle in a healthy gulp of your best olive oil. Add a little salt and pepper. Squeeze in half a lemon worth of juice. Mix it up and serve it chilled. Its great on a hot day.
