      As an aside, I find white people hot sauces to be pretty unpleasant. Most of the actually hot ones seem to be unbalanced and only out to cause pain in a "eating this proves I'm macho" kind of way. If there's any balance of flavor, it's just a bit sour which is fine but still not amazing.

      Idk, if anyone has recommendations, lmk.

        What heat level do you top out at and what flavor profile do you want? We are having a bit of a hot sauce renaissance so lots of options.

    It was Beijing's ruinous salt tax that forced the Sichuanese to use chili peppers to flavor their food. A major source of income was taxing salt. It's demonic in its evilness. Either pay the sky-high price or have food with no taste. Salt is an important nutrient that is essential in our cells, which is why we are rewarded for consuming it with the sensation of good taste. So they were forced into using peppers, which let's just be clear here, hurt. The government forced people to hurt rather than eat bland, flavorless food. Demonic.

        Sichuanese people can't eat anything unless it's burn-your-mouth-off spicy. If it's not, they complain it has no flavor and is not worth eating. A curse, honestly.

    Back in my spice lord days, I could reliably push myself up to about 2 million scovilles.

    I haven't bought stuff like that in a few years, but I'd be down to do a Hexbear Hot Ones sometime.
