Italians are so cucked by the ruling class that they can't enjoy a combination of sweet and salty and acidic flavors. Apparently it's very important in their culture to pretend to be mature consumers whose lives are happily controlled by bourgeois virtues.     I'm all for weird shit on pizza, and I can understand people liking pineapple on it, but just can't stand it myself. Anyone who says that it 'cant' be on pizza is a fucking moron though. There aren't any fucking pizza laws.

        It's definitely an acquired taste. And yet we don't see struggle sessions about anchovies, which can go from "hey, not bad" to "oh my fucking god, everything in this room stinks of rotten fish" with less than a minute's worth of (over-)cooking time.

        We also have a resturant chain in Canada called Boston Pizza, which is just a sports bar that serves garbage tier pizza including very shitty Hawaiian pizza. There's one of these monstrosities in every city and town I've visited in Canada. They have a few locations in the US but curiously not in Boston, probably becuase they would rightly burn it down for stealing Boston Valor.

    When I traveled to Italy many restaurants had pizza with French fries as a topping. I tried to get away from tourist areas too and I kept seeing this on the menus. Mature consumers my ass. Like the whole menus are just processed carbs and greasy shit. Where's the vegetables? Maybe I went to the wrong places, but I was seriously underwhelmed with what I was led to believe was world class cuisine.

    My wife worked as a caterer up until pretty recently and one of her worst experiences ever was catering a Italian American wedding.

    They used garlic instead of shallots in their recipe, 99% of the guests had no problem scarfing it down, however one older woman was disgusted by the garlic not being shallots and in 15 minutes there were half-a-dozen fat New Jerseyans screaming at her in the kitchen for making inauthentic slop as they called it. They then used this as an excuse to refuse to tip.

    Speaking of things that don't give you an experience, that's just about any given Italian recipe. Aside from hand making pasta, almost all of their recipes are like get high quality ingredient and don't fuck it up by getting it to the table. The French and Chinese will take literally any meat or vegetable, no matter how inhospitable or inedible, and turn them into something insanely tasty. Italian cooking has never evolved beyond three basic foods (pasta, sausage, cheese) and remaking those in slightly different ways and then bitching about any deviation therefrom.

    Fuck overrated-ass Italian cooking, is my point. There's no skill involved in 99% of their cooking. Hand making pasta is the only impressive thing they do, so they do it thousands of different little ways.

    Cheese on bread with sauce is one of the most expected and reductive recipes ever, but it's all Italians have as "culture". I think that's why they claim it so fervently, even though it's basic and doesn't matter.

    People who fight about the type of toppings that can go on a pizza are insufferable dorks. The only pizza-topping issue that is at all important is not putting on so many toppings that the pizza doesn't fully cook as a result. No one wants a soggy undercooked crust.
