Individuals abstaining from meat won't, but ending animal agriculture (at least to the extent it happens now) has to happen one way or the other or we're fucked, and the more people who eat meat, the harder it is to do that.
I mean, even as a disgusting dirty awful omni I agree that the meat industry would have to be significantly scaled down, to the point where its not even an "industry" anymore really, though I'm not sure sure its as huge a part of the climate change problem as you think it is. But I don't believe in ethical consumption or consumer activism so I don't believe whether or not you eat meat has anything to do with whether the meat industry survives.
People (libs especially) usually see these options for dealing with climate change:

You're right, we have to explicitly fight against that 'argument'. Even moreso because the climate problem isn't going anywhere, we need to raise consciousness and spread our ideals, and by eliminating that third option, when left with options 1 and 2, it can be a powerful tool
granted that does still leave you dealing with 4, which is harder to argue against casually due to the density of the topic, 4 is very very incorrect but why it's incorrect just isn't very intuitive, which is why it makes for such good 'sounds right, can't be disproved' platitude propaganda libs love so much

This is my experience arguing with my lib friend, like once a left position becomes mainstream (like Medicare-for-all) he will just pretend that's what he was fighting for the whole time without any acknowledgement of all the times he's argued against that very thing. However he will also not apply the leftist argument to another position which hasen't become mainstream like a housing garentee or free college.
if they just admit that they were wrong, or not even that, just give some weight to the opinions of the people who were right the whole time, it would all be fine. this will never happen.

Some random blog or youtube video, most likely. It's a standard go-to for climate change deniers - usually combined with some bullshit about Milankovitch cycles or solar cycles.
I believe starting in the 70's and continuing into the 80's and 90's, people were talking about a new ice age caused by widespread use of aerosols, and between the 40's and the 70's, there was some cooling happening, and some scientific papers suggested this would continue, though they were in the minority even at that time, as the effects of GHG's were expected to overtake the cooling caused by aerosols by basically any reasonable model even back then.. However, the "ice age" story was signal boosted by a lot of people in the MSM at the time. So, if you dad formed his opinion on the topic in the mid 70's and just never really looked into it or was never really reading scientific papers, it's easy that he just thought the one article he read on the topic from Time or Newsweek was still relevant...
Or it could just be the MAGA chuds at his work.. and maybe they read it once in Time or Newsweek in the mid 70's.. Or they just made it up because they needed to combat the ACC science.

He's generally a mirror of whatever the general take that fox is putting out is. For years he's also thought it was a hoax, but now he thinks it's maybe real but definitely not man made.

Same with my dad and he lives on the gulf coast, where we get battered with hurricanes. Last year alone was one of the worst years for tropical weather and we ended up getting 3 hurricanes in our area. It took him years to realize it was real, but his view is like other right wingers "there's nothing we can do about it anyway, so why worry? It's not really man made either, don't say that!"
