Maybe if you use the burner exclusively at protests and otherwise have it switched off, secured in a Faraday cage?
maybe upload the photos and videos somewhere safe and not really traceable and then destroy it before leaving the area?
And then you can use some tool(like this) to strip your images of their metadata and you should be good.

you have to set the burner up so don't take your phone when you do that, don't buy a burner with a credit card (pay cash), pay for the plan with cash (buy a prepaid debit if you need to), and set it up far enough away from your home that you're pinging a different cell tower. then yeah, always leave it off until you're well away from home.

They didn't compromise the phone. They gave them access to iCloud as they have ALWAYS done in all instances. It's just some people don't back up their entire phone to iCloud so they can't get all data from that.
If you have stuff on your phone you don't want the feds to see do not let it be stored or backed up to icloud. The most secure solution is to back your phone up only locally to an encrypted hard drive with a strong password.
Do not take your phone to protests.
Do not take pictures of compromising things that could place you in legal jeopardy. If you absolutely must do not do that on a phone where your photos are set to automatically back up or transfer (photo stream) to other devices.
Do not share any pictures that could put you in legal jeopardy, the likes you get on instagram for your cool photo posing in front of a felony you've documented yourself committing are actually worthless and certainly not worth the jail time and felony conviction they'll get you.
