Geologically they refer to the largest "chunks" of contiguous land mass, which is why most of the "continents" follow the lines of the tectonic plates. Except Europe, because it's made up.

This is only true if you assume continental lines cannot and should not be changed again. We added a 13th zodiac sign and civilization didn't collapse, I think we can handle updating continental projections to reflect geological changes every 25 years or so. :)

Counterpoint: "continents" were created by the greeks to delineate territory to the east and west of the Aegean Sea and is therefore an arbitrary geological term and because it is an arbitrary distinction I can call whatever the fuck I want a continent; including Arabia. Additionally, Arabia lies neither directly east or directly west OR directly to the south of the Aegean Sea (Asia, Europe, & Africa respectively) but to the south-east! Meaning it should require a distinct continental title according to this convention.
